Thursday Dinner - Palak Paneer and Baingan Bharta with Basmati Rice
Palak Paneer is a dish of Indian paneer cheese cubes cooked in a mildly spiced spinach puree.
Baingan Bharta is also an Indian dish made with Eggplant simmered with onions in a spicy tomato sauce. I used Thai Petch Siam eggplants (See photo).
I like to serve this with Deep brand Mixed Pickles.
