Shrimp with Pineapple and Banana

Ingredients
1 lbs           Shrimp (peeled and deveined)
2 cups        Fresh Pineapple (diced)
4               Bananas (diced)
12             Kaffir Lime leaves
2 tbsp        Ginger (finely minced)
1 tsp          Garlic (finely minced)
1/4 cup      Ketchup
1/4 cup      Asian Orange Sauce
1/2 tsp       Sesame Oil
4 tbsp        Peanut Oil





Mix together Ketchup, Orange Sauce and Sesame Oil in a bowl and keep aside.

Heat wok over medium high heat.  Pour in peanut oil and add Shrimp, Garlic and Ginger.  Stir and fry for two minutes.
Add diced fresh Pineapple, Kaffir Lime Leaves and Banana and stir fry for two minutes.  Then add sauce  and toss until sauce is hot.



Thai Sweet Rice topped with Broiled Banana
Ingredients
3 cups         Thai sweet rice
2                 Bananas
1 tsp            Sugar
1/4 tsp         Cinnamon
Honey for drizzling

Soak Thai Sweet Rice in water for 3 hours.  Wrap Rice in two layers of cheesecloth and steam for 20 minutes, turning halfway though to ensure even cooking.
With wet hands and knife blade,form rice into square shape on serving plates.
Slice Bananas lengthwise and place in nonstick pan.  sprinkle with sugar and cinnamon.  Place under broiler for 3 minutes.

Top rice squares with Bananas and drizzle with honey.
