Spicy Sobe Noodles with Wakami Seaweed


Ingredients
1 small bundle of Japanese wheat sobe noodles
2 tbsp chopped rehydrated wakami seaweed
1 dried red pepper (broken)
12 oz water or stock
1 tbsp vegetarian oyster sauce
1 tbsp mushroom soy sauce
1 tsp sriacha chili sauce
sesame oil for fininshing

Bring stock to a boil.  Add seaweed and chili and boil for 1 minute.  Add noodles and return to boil for 2 minutes.  Stir in oyster sauce, sriaca and soy sauce.  Lower heat and simmer for 10 minutes.  Remove from heat and drizzle with sesame oil.  Serve immediately.
