Artichoke Heart and Ham Quiche


Ingredients
1              Pie Crust
6              Eggs (slightly beaten)
1 cup        Ham (diced)
1/2 cup     Sour Cream
1/2 cup     Mayonnaise
1 cup        Onion (chopped)
1 cup        Artichoke Hearts (I prefer frozen, thaw and squeeze out liquid before using)
1/2 cup     Red Bell Pepper (diced)
1 cup        Parmesan Cheese (freshly grated)
2 cloves     Garlic (roughly chopped)
2 Tbsp       Extra Virgin Olive Oil
Cracked Black Pepper to taste

Pre-heat Oven to 400F.

Heat Olive oil over medium heat.  Add garlic and onions and sautee for 3 minutes.   Roughly chop Artichoke Hearts and add to onions.  Sautee for another 5 minutes.  Remove from heat and allow to cool.

In a large bowl combine Eggs, Sour Cream and Mayonnaise, beating until smooth.  Stir in Ham, Artichoke mixture, Red Peppers, Parmesan Cheese and Black Pepper.

Pour mixture into Pie Shell and bake for 35 minutes.  Allow to cool for 5 minutes before slicing.
